The answer is so obvious that it is embarassing.  Nested in the toolbar is the zoom tool. Of course it does everything that I was asking for.  Well almost, I would love to be able to increase the size of the items in the pallete (or have a rolloveer magnifying glass).  Nevertheless 90% of what was difficult for me is now ok and I don't mind squinting for the rest.  yay.

I've done this and it helps with the toolbar icon, thank you.  I still can't figure out how to manage the sizes of things in the main maple windows.

The menu are fine, its the fonts used within the Maple windows that I'm struggling with.  I'm using a MBP with Apple Silicon, could tat expalin anything?
